Michelle Maistro’s Corn Pudding Recipe: Gastronomy of Marriage

I have been cooking my way through Michelle Maistro’s The Gastronomy of Marriage: A Memoir of Food and Love, which is a fabulous, easy, quick read.  My mother made something VERY similar to Michelle Maistro’s roommates recipe for Corn Pudding.  It is super simple, inexpensive, and amazingly delicious.  This is my go-to cornbread recipe for Thanksgiving!

Michelle Maistro’s Recipe for Corn Pudding: Gastronomy of Marriage:

Ingredients:
– 2 eggs
– 1 can corn, drained
– 1 can creamed corn
– 1/2 stick butter, melted
– 1 box corn muffin mix (I like Jiffy Mix!)

Directions:
1.  Preheat your oven to 350 degrees.
2.  Mix together the corn, creamed corn, butter and muffin mix.
3.  Add the 2 eggs.
4.  Stir until combined, but don’t over-mix.
5.  Bake 20-25 minutes until it is nice and golden.
